MICROCLIMATE: Rainy winters with moderate temperatures, and dry hot summers.
SOIL: Medium texture soil with a tendency to compact, interspersed with limy tufa.
YIELD PER HECTARE: 8 tons.
CULTIVATION SYSTEM: Espalier.
PLANTING DENSITY: 4.000 – 5.000 plants per hectare.
HARVEST PERIOD: In the middle of September.
VINIFICATION: In white with soft pressing.
FERMENTATION TANKS: Stainless-steel, 150 hl. capacity.
FERMENTATION TEMPERATURE: 15 – 18°C.
AGING: Refining in stainless steel, followed in the bottle.
MACERATION PERIOD: 5 /8 days on skins.
